Main Dish:

  • 1 lb penne pasta (or pasta of choice)
  • 2 cups shredded mozzarella cheese
  • 2 boneless, skinless chicken breasts, cubed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp butter
  • 2 tbsp olive oil

For Alfredo Sauce:

  • 1/2 cup butter
  • 3 cups milk
  • 8 oz cream cheese
  • 1 tbsp minced garlic
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning (or 1/4 tsp each dried oregano, rosemary, basil, parsley)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cups grated Parmesan cheese

Optional Garnish:

  • Fresh basil and parsley

Instructions

  1. Preparation:
    • Preheat your oven to 350°F (175°C).
    • Season cubed chicken with oregano, basil, garlic powder, onion powder, salt, and pepper.
  2. Cooking the Chicken:
    • In a large skillet, heat butter and olive oil over medium-high heat.
    • Add seasoned chicken and sauté until cooked through (6-8 minutes). Set aside.
  3. Cooking the Pasta:
    • Cook the penne pasta in salted boiling water according to package directions until al dente.
    • Drain and set aside.
  4. Making the Alfredo Sauce:
    • In the same skillet, melt butter and cream cheese over medium heat.
    • Stir in the milk and whisk until smooth.
    • Add minced garlic, garlic powder, Italian seasoning, salt, and pepper. Stir until combined.
    • Bring to a light simmer, then add Parmesan cheese. Cook until thickened (about 5-8 minutes).
  5. Assembling the Bake:
    • Combine the cooked chicken, Alfredo sauce, and pasta.
    • Transfer the mixture to a 9” x 13” baking dish.
    • Top with shredded mozzarella cheese.
  6. Baking:
    • Bake for 5-10 minutes or until the cheese is melted and golden.
    • Garnish with fresh basil and parsley if desired.
