  • 4 boneless, skinless chicken breasts, cut into strips
  • 1/2 cup chopped onion
  • 1 cup sliced mushrooms
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Crepes:
    • In a medium bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth.
    • Heat a nonstick skillet over medium heat and lightly grease with butter or oil.
    • Pour about 1/4 cup of batter into the skillet, tilting to coat the bottom. Cook for 1-2 minutes on each side until lightly browned. Repeat with the remaining batter.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add chicken strips and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. Make the Mushroom Sauce:
    • In the same skillet, sauté the chopped onion and sliced mushrooms for 5-7 minutes until softened.
    • Add the white wine and cook until reduced by half.
    • Stir in heavy cream, season with salt and pepper, and simmer until thickened, about 5 minutes.
  4. Assemble the Crepes:
    • Spoon the cooked chicken onto each crepe, fold them over, and drizzle with the creamy mushroom sauce.
    • Garnish with fresh parsley.
