  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, cracked
  • 2 tablespoons olive oil

For the Creamy Mushroom Garlic Sauce:

  • 1 tablespoon butter
  • 8 ounces brown mushrooms (250g), sliced
  • 4 cloves garlic, minced (or 1 tablespoon minced garlic)
  • 1 tablespoon fresh parsley, chopped
  • 1/21 teaspoon dried thyme (to taste)
  • 1/21 teaspoon dried rosemary
  • 1 1/2 cups thickened cream or heavy cream (or use evaporated milk/half and half)
  • 1/2 cup parmesan cheese, freshly shredded

Instructions

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels. Season with onion powder, garlic powder, dried thyme, dried rosemary, salt, and cracked black pepper.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove and set aside.
  3. Prepare the Sauce:
    • In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook until tender and browned, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.
  4. Combine Ingredients:
    • Stir in chopped parsley, dried thyme, and dried rosemary. Pour in the cream, bringing the mixture to a gentle simmer. Add the shredded parmesan and stir until the sauce is smooth and creamy.
  5. Finish the Dish:
    • Return the cooked chicken thighs to the skillet. Spoon the sauce over the chicken and let it simmer for 5 minutes to meld the flavors.
  6. Serve:
    • Serve hot, garnished with fresh parsley if desired. This dish pairs well with mashed potatoes, pasta, or a fresh salad.
