- 3–4 lb beef chuck roast
- 4 large carrots, cut into 1-inch pieces
- 4 large potatoes, quartered
- 1 onion, quartered
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Season the beef roast generously with salt and pepper on all sides.
- In a large skillet, sear the roast over medium-high heat for 2-3 minutes per side until browned.
- Transfer the roast to a slow cooker. Arrange the carrots, potatoes, onion, and garlic around the roast.
- Pour in the beef broth and Worcestershire sauce. Sprinkle thyme and rosemary over the top.
- Cover and cook on low for 8-9 hours or on high for 5-6 hours, until the meat is tender and easily shreds with a fork.
