- 2 pounds boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 tablespoon light brown sugar
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon ground paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon butter, diced
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch casserole dish.
- Place the chicken breasts between two pieces of plastic wrap. Using a rolling pin or the flat side of a mallet, pound the chicken to an even thickness, about 0.5–0.75 inches.
- Rub olive oil all over the flattened chicken breasts.
- In a small bowl, combine the brown sugar, garlic powder, onion powder, ground paprika, Italian seasoning, salt, and black pepper. Sprinkle the seasoning mix evenly on both sides of the chicken breasts.
- Arrange the seasoned chicken in the prepared casserole dish. Top each chicken breast with a dab of butter.
- Bake the chicken in the preheated oven for 18-20 minutes, or until the internal temperature reads 165°F (74°C). Optionally, turn on the broiler for the last 2-3 minutes to add some browning.
