  • 2 pounds boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 tablespoon light brown sugar
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon ground paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon butter, diced

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch casserole dish.
  2. Place the chicken breasts between two pieces of plastic wrap. Using a rolling pin or the flat side of a mallet, pound the chicken to an even thickness, about 0.5–0.75 inches.
  3. Rub olive oil all over the flattened chicken breasts.
  4. In a small bowl, combine the brown sugar, garlic powder, onion powder, ground paprika, Italian seasoning, salt, and black pepper. Sprinkle the seasoning mix evenly on both sides of the chicken breasts.
  5. Arrange the seasoned chicken in the prepared casserole dish. Top each chicken breast with a dab of butter.
  6. Bake the chicken in the preheated oven for 18-20 minutes, or until the internal temperature reads 165°F (74°C). Optionally, turn on the broiler for the last 2-3 minutes to add some browning.
  7. Serve immediately for the juiciest and most flavorful results.
