- 1 lb shrimp, peeled and deveined
- 2 cups cooked white rice
- 1/2 lb ground sausage
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup chicken broth
- 1/4 cup green onions, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground sausage and cook until browned, breaking it up with a spoon. Remove the sausage and set aside.
- In the same skillet, sauté chopped onion, bell pepper, celery, and garlic for 4–5 minutes, or until the vegetables are softened.
- Stir in the Cajun seasoning, smoked paprika, and optional cayenne pepper.
- Add the shrimp to the skillet and cook for 3–4 minutes, until pink and opaque.
- Return the cooked sausage to the skillet. Add chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in the cooked rice, mixing thoroughly with the other ingredients. Cook for an additional 5 minutes to let the flavors meld.
- Remove from heat and stir in green onions and parsley. Season with salt and pepper to taste.
