  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 4 potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup tomato paste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup frozen peas
  • 2 tablespoons olive oil
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken chunks and brown on all sides (about 5 minutes). Transfer the chicken to the slow cooker.
  2. Add carrots, celery, potatoes, onion, and garlic to the slow cooker.
  3. Stir in chicken broth, tomato paste, thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 7 hours, or until the vegetables are tender and flavors meld together.
  5. 30 minutes before serving, stir in frozen peas.
  6. Serve warm, garnished with fresh parsley if desired.
