  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, chopped
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry on a floured surface. Cut into 3-inch by 3-inch squares using a knife or pizza cutter.
  3. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In a saucepan, combine chopped strawberries, cornstarch, lemon juice, and water. Cook over medium heat for 5-7 minutes until the mixture thickens. Cool slightly.
  5. Place a spoonful of cream cheese mixture in the center of each puff pastry square. Top with a spoonful of the strawberry mixture.
  6. Fold the pastry corners over the filling or leave them open for a rustic look.
  7. Brush the edges with the beaten egg and place the pastries on a parchment-lined baking sheet.
  8. Bake for 15-20 minutes or until golden brown and puffed.
  9. Cool before serving and enjoy!
