- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh strawberries, chopped
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry on a floured surface. Cut into 3-inch by 3-inch squares using a knife or pizza cutter.
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
- In a saucepan, combine chopped strawberries, cornstarch, lemon juice, and water. Cook over medium heat for 5-7 minutes until the mixture thickens. Cool slightly.
- Place a spoonful of cream cheese mixture in the center of each puff pastry square. Top with a spoonful of the strawberry mixture.
- Fold the pastry corners over the filling or leave them open for a rustic look.
- Brush the edges with the beaten egg and place the pastries on a parchment-lined baking sheet.
- Bake for 15-20 minutes or until golden brown and puffed.
